Thai Green Curry Chicken Rice

Method
- Prepare rice per package instructions.
- Sauté onion and chicken in large pan until cooked thoroughly.
- Add bell pepper, curry paste, coconut milk and stock - simmer for 10 minutes.
- Add snow peas, eggplant and cilantro and cook until tender.
- Serve curry on top of rice.
