Thai Green Curry Chicken Rice

Method

  1. Prepare rice per package instructions.
  2. Sauté onion and chicken in large pan until cooked thoroughly.
  3. Add bell pepper, curry paste, coconut milk and stock - simmer for 10 minutes.
  4. Add snow peas, eggplant and cilantro and cook until tender.
  5. Serve curry on top of rice.
