Spanish Chicken and Tomato Rice

Method

  1. Heat oil in frying pan over medium-high heat and cook chicken until lightly browned.
  2. Add rice, stock and spaghetti sauce; bring to a boil. Reduce heat, cover and simmer 15 minutes, until moisture is absorbed.
  3. Add remaining ingredients (except parmesan cheese) and simmer another 5 minutes.
  4. Sprinkle with parmesan cheese and serve.
