White & Wild Rice with Cranberries and Caramelized Onions

Method

  1. Sauté butter in skillet on medium heat with onion until translucent.
  2. Add brown sugar, cranberries and orange zest and rice; saute for 5 more minutes.
  3. Pour in chicken broth bring to a boil, then cover with a tight fitting lid and turn down to low simmer for 30 minutes or until all moisture is absorbed.
  4. Fluff with a fork and serve.
