Marry Me Chicken and Rice

Method
- Heat a large pan over medium. Add 1 tbsp butter + 1 tsp tomato oil. Sear the chicken with garlic powder, paprika, salt, and pepper for 5–6 mins until golden. Remove and set aside.
- Melt the remaining butter, sauté shallots, then add in the sun-dried tomatoes and your rinsed rice. Toast until fragrant.
- Add 2 cups broth, bring to a gentle simmer, cover, and cook for about 14 mins or until rice is tender. Use the remaining 1/4 cup broth if needed to loosen it up
- Add in spinach and cream, cover for another minute, and adjust seasoning.
- Return the chicken to the pan. Top with Parm, chives, and a drizzle of that tomato oil.
