Marry Me Chicken and Rice

Method

  1. Heat a large pan over medium. Add 1 tbsp butter + 1 tsp tomato oil. Sear the chicken with garlic powder, paprika, salt, and pepper for 5–6 mins until golden. Remove and set aside.
  2. Melt the remaining butter, sauté shallots, then add in the sun-dried tomatoes and your rinsed rice. Toast until fragrant.
  3. Add 2 cups broth, bring to a gentle simmer, cover, and cook for about 14 mins or until rice is tender. Use the remaining 1/4 cup broth if needed to loosen it up
  4. Add in spinach and cream, cover for another minute, and adjust seasoning.
  5. Return the chicken to the pan. Top with Parm, chives, and a drizzle of that tomato oil.
