Lemon Rice Pilaf

Method
- Sauté 1 tablespoon of oil in saucepan with onion and curry powder for 1 minute over moderate heat.
- Add rice and sauté for 2 minutes.
- Add stock and bring to a boil. Reduce heat and simmer covered for 15 minutes.
- Add prawns and simmer, cover for an additional 4 minutes.
- Stir lemon juice, parsley and lemon zest (optional) through rice and stand, covered for 5 minutes before serving.
