Fried Rice Hacks: Pork & Coconut Fried Rice

Method
- Place the Hinode Medium Grain Brown Rice and water into a rice cooker and set to cook.
- Once all the ingredients are prepped, heat a large wok over high heat.
- Once hot, add the oil and the pork and use a wooden spatula to push the pork out to the edges and allow it to brown really well on one side.
- Once golden underneath, add the lemon grass and onion to the top and then stir.
- Cook for 5mins then add the brown sugar, coconut and cooked rice and mix well.
- Pour in the lime juice, fish sauce and hoisin and continue to cook over high heat for 5mins stirring occasionally, until there are golden crispy bits and everything is combined.
- Sprinkle with peanuts and serve immediately with fresh herbs and lettuce cups.
- Hint: Adjust sweetness by adding more or less brown sugar to taste. Add chilli as desired.
