Mexican Rice

Try this delicious and fluffy Mexican Rice from [@jc.eeats](https://www.instagram.com/jc.eeats), using Hinode Low GI White Rice. The perfect base for your next taco bowl.

Method

  1. Blend together Roma tomatoes, onion, garlic, and seasonings with water.​
  2. Add oil to the pan and toast the Hinode Low GI White Rice on medium-low heat for 5-8 mins, or until it is lightly golden.​
  3. Pour the tomato blend through a strainer and add water to the pan. Add one jalapeño on top and bring to a gentle boil. ​
  4. Cover with a lid and cook on low heat for 20 minutes (do not open the lid at this time).​
  5. Keeping the lid on, remove from heat and let it rest for 5 minutes.​
  6. Fluff rice and enjoy with taco toppings.
