Spiced Lamb Tagine with Rice

Method

  1. Heat oil in a saucepan, add onion, garlic and diced lamb, stir occasionally for about 5 minutes or until lamb is lightly browned.
  2. Add spices, stir and cook for an additional 2 minutes.
  3. Stir in tomatoes and stock, cover and simmer for 15 minutes.
  4. Add apricots and simmer until lamb is tender.
  5. Prepare rice per package instructions.
  6. Season to taste and serve on a bed of hot Hinode rice.
