Satay Vegetable Kebabs

Method

  1. Prepare Hinode rice per package instructions.
  2. Thread the tofu, zucchini, tomatoes, mushrooms, red bell pepper and pineapple chunks onto skewers.
  3. Arrange onto a baking or grilling tray lined with foil and spray with a little olive oil.
  4. Grill until cooked to your liking; turning the kebabs over half way through cooking.
  5. Heat satay sauce in sauce pan or microwave.
  6. Arrange the kebabs over a bed of rice.
  7. Top with satay sauce and serve.
