Roasted Vegetables with Rice

Method
- Prepare Hinode rice per package instructions.
- Sauté garlic and tomatoes in olive oil over medium heat.
- Add zucchini, brown sugar and stock.
- Simmer until zucchini is tender.
- Season with salt and pepper.
- Serve over cooked Hinode rice and garnish with basil.
