Roasted Vegetables with Rice

Method

  1. Prepare Hinode rice per package instructions.
  2. Sauté garlic and tomatoes in olive oil over medium heat.
  3. Add zucchini, brown sugar and stock.
  4. Simmer until zucchini is tender.
  5. Season with salt and pepper.
  6. Serve over cooked Hinode rice and garnish with basil.
