Chinese Chicken Rice Soup

Method

  1. Boil chicken in water until cooked through. Remove chicken from water and add to pot with a tight fitting lid.
  2. Add uncooked Hinode white rice into a sauce pan and add stock.
  3. Stir with a wooden spoon, bring to a boil and then turn down burner to medium/low heat and simmer for 20 minutes, stirring occasionally.
  4. Serve in a bowl and garnish with cilantro and green onion.
