Chicken and Mango Rice

Method

  1. Heat oil in frying pan over medium high heat and cook chicken until lightly browned, 2- 3 minutes.
  2. Add rice and stock to chicken and bring to a boil.
  3. Reduce heat to low and simmer, covered, per rice package directions.
  4. Steam vegetables until tender.
  5. Sauté vegetables, mango, shallots and sauces with rice until mixed thoroughly.
  6. Top with nuts and serve.
